Marinated Lemon Balsamic Grilled Chicken

Try this easy marinade for a lower sodium option full of flavor for a delicious and nutritious meal the whole family will love! Try topping it with a refreshing Strawberry Basil-Balsamic Salsa for some extra flavor, fiber, & antioxidants!

 

Servings: 2

 

Ingredients:

  • 2 medium chicken breasts, boneless and skinless

  • 2 tablespoons balsamic vinegar

  • 2 tablespoons olive oil

  • 1 small pinch (~1/16tsp) of sea salt (optional; skip the salt for a lower sodium meal)

  • cracked black pepper, to taste

  • Juice of 1 lemon

  • 1/8 tsp crushed red pepper flakes

 

Preparation:

 

  1. Combine all ingredients in a shallow bowl or plastic zipped bag. Let marinate in a refrigerator for 6+ hours.

  2. Grill chicken until fully cooked through.
