Tropical Salsa Chicken

 

This super easy Tropical Salsa makes a very flavorful topping to toss on top of your chicken for a twist on the 'same old stuff' for dinner! Not only does it boost the flavor of your meal, but it provides an extra dose of fiber and a variety of antioxidants to help keep you healthy and feeling good! Don't want chicken? Try the salsa as a side dish, over fish or other proteins, or even with chips!

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

Servings: 8

Serving Size: 1 small chicken breast or 1/2 large chicken breast with 1/2 cup salsa

 

Ingredients:

 

Chicken -

  • 4 large or 8 small boneless, skinless chicken breasts

  • 4 Tbsp salt-free citrus seasoning (I used McCormick Salt Free Perfect Pinch Fiesta Citrus)

  • 4 garlic cloves, crushed

  • 1 Tbsp ground black pepper

  • 1/4 cup olive oil

  • Juice of 2 large limes

 

Salsa -

  • 1 pineapple, peeled and diced

  • 1 mango, peeled and diced

  • 1/2 of one red onion, peeled and diced

  • 2 Italian hot green peppers, diced

  • 1 jalapeno pepper, seeded and diced

  • 1 cup fresh cilantro, chopped

  • juice of 2 large limes

 

 

Preparation:

1. Place chicken breasts in a container or zipped bag with citrus seasoning, garlic, pepper, oil, and lime juice. Marinate in refrigerator for 12-24 hours, turning half way through.

2. Prepare salsa by combining all of the chopped/diced salsa ingredients in a large bowl. Let sit in refrigerator while chicken marinates.

3. When chicken is done marinating, cook on the grill until cooked all the way through.

4. Top with salsa before eating and enjoy your tropical nutritious meal!
