Warm Squash, Goat Cheese,

& Pecan Sautee

This quick sauteed side dish is sure to sooth your taste buds with a boost of flavor & creamy goat cheese that will just melt in your mouth. Acorn squash will provide you with a variety of beneficial vitamins, including vitamin A & C. The squash also will bump up the fiber content of your meal, promoting digestive wellness! Try this very easy dish to warm up your next family meal!

 

Servings: 2

Time: 20 minutes

 

Ingredients:

  • 1 medium-sized acorn squash, peeled and chopped into about 1-inch chunks

  • 3-4 cloves garlic, peeled and coarsley chopped

  • 1 Tbsp olive oil

  • 1 Tbsp pecans

  • 3 large basil leaves

  • 1 pinch sea salt

  • ground black pepper, to taste

  • 2 Tbsp goat cheese, crumbled (try reduced-fat to cut back on the fat calories!)

 

Preparation:

  1. Heat oil in a non-stick pan over medium heat. 

  2. Add garlic to pan and sautee about 2 minutes, until garlic begins to soften..

  3. Add squash to pan and combine with garlic. Cook, stirring occasionally, for approximately 6-8 minutes, until lightly browned. Tear basil leaves into smaller pieces and place in pan over the squash. Let it cook for another 1-2 minutes.

  4. Add pecans to pan and sautee mixture for an additional 2 minutes.

  5. Remove pan from heat. Add goat cheese crumbles and combine. Serve warm & enjoy!
