Mediterranean Quinoa Dinner

Servings: 4

 

Ingredients:

  • 10oz. package baby spinach

  • 1 cup dry quinoa

  • 2 cups water

  • 2 kumato tomatoes (or tomatoes of your choice), diced

  • 3 large fresh basil leaves, ripped or cut into small pieces

  • 1 Tbsp dried oregano

  • 4 Tbsp extra-virgin olive oil

  • 4 Tbsp white balsamic vinegar

  • 1 tsp ground black pepper

  • 1/4 cup feta cheese crumbles (choose reduced fat, if desired)

  • 1/2 large cucumber, diced

  • 2 Tbsp kalamata olives, chopped

 

Preparation:

1. Prepare quinoa on the stove-top in a medium saucepan according to package using the quinoa and water.

2. Split spinach leaves among the four plates. Combine quinoa is a bowl with oil, vinegar, pepper, dried oregano, and basil. Stir to combine. 

3. Add tomatoes, feta, cucumbers, and olives to each plate over the quinoa.
