Mediterranean Radish Salsa

 

Be the talk of your next party or gathering by impressing your friends with this fresh & flavorful take on the usual tomato salsa. Full of peppery radishes, salty feta, and sour citrus, the flavor combination will havae your guests coming back for more! 

 

Prep Time: 10  minutes

Servings: 4

 

Ingredients:

- 5 large radishes, finely chopped

- 3 cloves fresh garlic, minced

- 1/4 cup extra virgin olive oil

- juice of 1 lemon

- 1 tsp dried parsley

- 1/4 cup reduced fat feta cheese, crumbled

 

Preparation:

1. Combine chopped radishes and minced garlic into a bowl.

2. Add olive oil, lemon juice, and parsley and combine.

3. Stir in crumbled feta cheese and serve on pita chips, whole grain toasted bread, or eat as is!
