Easy Roasted Potatoes & Carrots

 

Try this super easy side dish for your family tonight! Potatoes and carrots give you a great serving of healthy carbohydrates and nutrients. This is a very easy side dish that you can toss in the oven with your main dish, such as chicken, making it a very doable option for busy families when everyone gets home from school and work!

 

Servings: 6

Time: 1 hour, 15 minutes

 

Ingredients:

  • 2 lbs potatoes, cut into chunks (small red potatoes work well)

  • 2 cups diced carrots or baby carrots

  • 4 Tbsp olive oil

  • 4 cloves fresh garlic, crushed

  • 2 tsp cumin

  • 2 tsp paprika

  • 1/2 tsp cayenne pepper

  • 1 tsp ground black pepper

  • 2 Tbsp dried parsley

 

Preparation:

  1. Preheat oven to 375 degrees F. After washing and chopping potatoes and carrots, combine in a baking dish with olive oil.

  2. Add fresh garlic, cumin, paprika, pepper, cayenne pepper, and parsley.

  3. Cook in oven, roasting until potatoes and carrots are softened and potatoes are slightly browned, approximately 1 hour.
