Easy Family-Style Mashed Potatoes

 

Mashed potatoes have pretty much become a staple side dish for American families, but how much saturated fat and salt are really being added into that pile of soft deliciousness? Try this recipe for a leaner, lower sodium, but still creamy and super delicious mashed potato side dish!

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

Servings: 5-6

 

Ingredients:

  • 5 yellow gold potatoes, washed and diced into chunks, about 2-inches wide (peeling potatoes optional)

  • 4 tablespoons I Can't Believe It's Not Butter spread

  • 3/4 cup low fat (1%) milk

  • Pepper, to taste

 

Preparation:

1. Boil water in a large pot on the stovetop.

2. Add potato chunks to boiling water. Cook approximately 10 minutes, or until potatoes are softened, stirring occasionally. Drain potatoes and add back to pot.

3. Add milk, I Can't Believe It's Not Butter, and pepper.

4. Use a hand mixer to blend potatoes into a smooth and creamy mixture, or mash for a chunkier texture.

 

Want more flavor? Add spices and herbs to your potatoes, such as garlic powder, onion powder, chili powder, parsley, basil, or paprika!
