Crunchy Fall Salad with Honey-Balsamic Dressing
This salad hits the spot on a cool fall day with a blast of autumn-like flavor to excite your taste buds! Jicama is very high in vitamin C and adds a nice juicy crunch to the salad along with the sweet apples and cranberries. Combine the sweet flavors with the walnuts and a delicious blended dressing for the lunch to get you in the fall spirit.

Ingredients:
Salad-

1 cup baby spinach

1/8 cup dried cranberries

2 Tbsp chopped walnuts

1/2 cup peeled and diced jicama

1/2 of one diced apple

1/4 cup red onion, sliced
Dressing-
-
1 Tbsp extra virgin olive oil
-
2 Tbsp balsamic vinegar
-
1 tsp honey
-
1/2 tsp dried thyme leaves
-
black pepper to taste

Combine spinach, cranberries, walnuts, jicama, and apple on a plate or in a bowl.

In a small bowl, combine oil, vinegar, honey, thyme, and pepper.
