Crunchy Fall Salad with Honey-Balsamic Dressing

 

This salad hits the spot on a cool fall day with a blast of autumn-like flavor to excite your taste buds! Jicama is very high in vitamin C and adds a nice juicy crunch to the salad along with the sweet apples and cranberries. Combine the sweet flavors with the walnuts and a delicious blended dressing for the lunch to get you in the fall spirit.

Prep Time: 10 minutes

 

Ingredients:

 

Salad-

  • 1 cup baby spinach

  • 1/8 cup dried cranberries

  • 2 Tbsp chopped walnuts

  • 1/2 cup peeled and diced jicama

  • 1/2 of one diced apple

  • 1/4 cup red onion, sliced

 

Dressing-

  • 1 Tbsp extra virgin olive oil

  • 2 Tbsp balsamic vinegar

  • 1 tsp honey

  • 1/2 tsp dried thyme leaves

  • black pepper to taste

 

 

  1. Combine spinach, cranberries, walnuts, jicama, and apple on a plate or in a bowl.

  2. In a small bowl, combine oil, vinegar, honey, thyme, and pepper.

  3. Drizzle dressing onto salad and enjoy the delicious flavors of fall!
