Chocolate-covered Raw

Cookie Dough Bites

 

Growing up, did you ever sneak a bite of raw cookie dough before it got popped in the oven when your parents were not looking? Well, now is your chance to enjoy the raw cookie dough ... guilt-free! 

 

No raw eggs means a delicious, safe cookie dough covered in chocolate for a sweet and comforting treat. Add outer toppings on the dipped chocolate to make these delicious bites for any of your holiday events!

 

Time: 20 minutes + refrigeration

Servings: 20-25 (depending on size of each bite)

 

Ingredients:

  • 3/4 cups oat flour (you can also use wheat flour)

  • 1/2 cup dark brown sugar, packed

  • 1/2 tsp vanilla extract

  • a pinch of sea salt

  • 1/2 stick I Can't Believe It's Not Butter Stick (4 Tbsp)

  • 1 Tbsp ground flax seed

  • 3 Tbsp luke warm water

  • 1/2 cup mini chocolate chips

  • 2 cups chocolate or chocolate chips for melting and dipping

  • decorative edible toppings (optional)

 

Preparation:

  1. Combine ground flax with 3 Tbsp luke warm water in a small bowl. Let sit for at least 5 minutes at room temperature until it thickens slightly (creating a "flax egg').

  2. In a large bowl, use a hand mixer combine I Can't Believe It's Not Butter, brown sugar, vanilla, and salt. You can also combine ingredients in a stand mixer. Add flour and "flax egg" and slowly combine until fully mixed.

  3. Add mini chocolate chips to dough and combine.

  4. Roll dough into balls, about 1-2 Tbsp each, or flatten dough and cut with a cookie cutter. Place cut cookie shapes or cookie balls on a plate and refrigerate for at least 10 minutes.

  5. Melt melting chocolate according to package instructions. Dip cookie balls or shapes into chocolate and place on a flat surface covered with wax paper.

  6. Before chocolate begins to harden, sprinkle on any toppings. Some options for toppings include sprinkles, chopped nuts, shredded coconut, or even dried fruit.

  7. Refrigerate cookie dough bites to harden the chocolate. Serve at your next party to bring all of your guests back to their raw-cookie-dough-sneaking-days and impress all of your friends! 

 

*Tips: If you find a flexible material ice-cube mold, you can fill the mold with the cookie dough and refrigerate until solid enough to remove while keeping the shape so you can cover in chocolate and end up with festive cookie dough bites!
