Cheesy Avocado Toast

 

Breakfast is all about kicking off the day with a boost of energy, and this Cheesy Avocado Toast does just that! The whole wheat bread gives you a dose of healthy carbohydrates & fiber for healthy digestion and energy, the reduced fat cream cheese gives you some protein to keep the energy lasting longer, and the avocado gives you a heart healthy serving of monounsaturated fats. Top it with some tomatoes and spices for some extra vitamins and antioxidants, and you've got a perfectly balanced breakfast to get you going!

Prep Time: 10 minutes

 

Ingredients:

  • 2 slices 100% whole wheat bread, toasted

  • 2 Tbsp neufchatel cheese (1/3 less fat cream cheese)

  • 2 Tbsp avocado, mashed

  • 5 grape tomatoes, sliced

  • 1 tsp crushed red pepper

 

Preparation:

1. Once bread is toasted, spread on neufchatel cheese.

2. On top of cheese, spread on the mashed avocado.

3. Top with tomato slices and crushed red pepper.
