Avo-Egg Toast

 

Well folks, this is it. Diana Savani's hands down favorite breakfast of all time!

Takes less than 5 minutes to prepare, has tons of flavor, and is packed with protein, fiber, and healthy fats to fuel the body for another successful day!

Pair this toast with a side of fresh fruit for a well-balanced breakfast!

Prep Time: 5 minutes

 

Ingredients:

  • 1/3 of an avocado, peeled

  •  1 egg

  • olive oil cooking spray

  • 1 slice whole wheat bread, toasted

  • spices/herbs/citrus for flavors (optional)

 

Preparation:

  1. While your toast is toasting, spray a nonstick pan with olive oil spray (just a light coating) and heat pan over medium heat on the stove. Crack an egg into the pan once heated and cook until desired texture. (For over medium, I cook mine for about 2 minutes on one side, flip and cook another 2 minutes)

  2. While egg is cooking, remove toast from toaster and mash your avocado onto the toast.

  3. Top toast with the fried egg and season with spices and herbs. A delicious combo is a pinch of sea salt, garlic powder, and crushed red pepper. You can even add a squeeze of lemon to the mashed avocado before adding the egg on top for an extra kick of flavor!
